Matt Brimmer (PRIMOS PRO STAFF) & Chef John McGannon enjoying some Juniperberry & Peppercorn Rubbed "meat on a stick"

"I first met John McGannon of Wildeats Enterprises in 1999 at the Sacramento ISE sportsmans show. My wife and I purchased one package of each of his rubs and we have been hooked ever since. Now instead of purchasing it in packages we get it in bulk.

I have hunted my entire life and was unaware of the fine table fare I had been missing out on. I used to have a lot of Jerky and Pepperoni in the freezer following a successful hunt, but times have changed. Following John’s advice on Dry Aging in conjunction with his rubs has changed the way I care for my game in the field and the way I prepare my game for the table."

August 19, 2006 - The Thirteenth Annual Point Reyes Photo Safari & Culinary Adventure

This is our own Fund Raising program established 13 years ago. We make these outing available to various Wildlife Organizations - RMEF, MDF, SCI & California Deer Assoc. To date we are very proud that we have raised over $75,000 for wildlife habitat and its management. See the Story Line below that was published a couple of years ago in Petersen's Hunting Magazine.

Welcome to a Point Reyes Safari and Culinary Adventure!

Prepare yourself for an outdoor dinning experience of a life time. The setting is a National Treasure and, in fact, most locals would consider it a secret treasure.

Picture this: you take a wonderful early morning drive up the coast, along small hamlets and through picturesque dairy farms on your way to the northern most point of Point Reyes National Seashore. You're met by Chef John McGannon of WILDEATS ENTERPRISES and the eager members of various Wildlife organizations (aka field guides).

Then you'll meet with other guests for coffee and muffins before setting out for a leisurely stroll (or horseback ride) through the rolling hills glassing for rutting Tule elk, black tail and fallow deer, bobcats, coyotes, rabbits, an occasional mountain lion and hundreds of species of birds. This takes place with the beautiful Marin headlands to the East and the frigid steel blue Pacific Ocean to the West. Your experienced field guides show you endless vistas and breathtaking wildlife scenes, Chef McGannon and his crew are busy building a grand setting for the upcoming feast.

You decide to take a breather and while sitting high on a salty breeze-swept bluff, the seagulls squeal their disapproval of your intrusion. On the distant slope is a huge herd of Native California Tule Elk (at present there are over 450 head within the confines of Point Reyes) slowly grazing towards you. You have your camera ready and begin to focus when to your surprise you notice a red eyed, love hungry rutting bull elk coming up from the valley below. His neck swells as he rips the scrub oak brush right out of the ground. He lets out the most ferocious bugle you've ever heard. The hair on the back of your neck stands straight up! Remember you are just yards from all of this! With that the heard bull lifts his head and heeds the challenge. He takes aim on the intruder and heads right at him. The intruder doesn't yield to the bluffing heard-master and there is a sonic collision. Grass is flying, earth is turned, and grunts of the struggle can be heard beyond the next slope. This melee goes on for what seems like hours (at least 10 minutes!), when ultimately the heard bull reins supreme once again. When the dust clears you pick up your jaw, which has dropped to the ground, and you realize you forgot to take one picture, don't worry the same scenario is repeated the entire day! In fact in recent years the heard has worked its way right to the spike camp for easy viewing after dinner. The rut lasts for nearly a month starting in mid July and coming to a peak in the middle part of August.

After you have caught your breath it's adult beverage time! So you head back to the spike camp. Now, this spike camp is like none you have ever seen! There is a fine linen clad table, set with crystal stemware, fine china and linen napkins, The beautiful and lush center piece is from natural artifacts found at The Point: shed elk antlers, star thistle, abalone shells, wildflowers and the like. But you aren't ready to sit at the table just yet! First, you'll enjoy a cocktail reception with California wines, micro-brewed beers, and soft drinks. Of course there's a chilled marble slab serving up imported and domestic cheeses, olives, crudités, and refreshing canapés.

Your late lunch, which actually turns into dinner, lasts about 2 hours. At this point you can either go back out for more scenic beauty or loll about the camp enjoying an adult beverage or two and perhaps a nice cigar to close the day. You can also chat with their personal chef for the day and get all those questions about the preparation of fish and game finally answered! And there are always the good old campfire stories that are bound to pop up among friends old and new.

Many good relationships have started at John's POINT REYES CULINARY ADVENTURE & PHOTO SAFARI. But the best one is the relationship with The Point. John has raised over $70,000.00 over the past twelve years for wildlife habitat conservation. That's a figure to be very proud of! Every one of the associates join in on the fun and work. Several chapter members actually assist the California Department of Fish and Game on captures, surveys and general maintenance of the Tule elk herd up at Point Reyes. There's a lot more going on than meets the eye when it comes to wildlife support organizations. We not only raise funding for habitat conservation, we put it on the ground and get results!

Where else could you sit down to an elegantly displayed dinning table and have a whole herd of rutting elk and the sun setting over the Pacific Ocean as your background. Join John in bridging the wild and the sophisticated!
